Have you ever wondered what makes the extra virgin olive oil green?

Carotenes and Chlorophylls, that’s the answer!

Carotenes bring the color red/orange, while the chlorophyll of type A is green/blue and the chlorophyll of type B is green/yellow. The color of the oil comes out from the mix of these pigments.

With time, however, chlorophyll degrades causing the color to change from bright green to yellow.

One of the most common frauds is to alter the color of the EVOO by adding some chlorophylls and carotenes, for this reason according to the COI (International Olive Council) the color of the oil is not fundamental in the qualitative evaluation.
